Pay the winery a visit at the right time and you can get a glimpse into many of the processes behind making its delectable wines. Every step of the wine production process is conducted on-site with one exception – the growing of the grapes. All the winery’s grapes are sourced from the best established and emerging growing regions across New South Wales, including Orange, Rylstone, Tumbarumba, New England, Hilltops, Hunter Valley and the Hastings River. Beyond this, the winery’s partnership with CSIRO is responsible for the first commercially grown chambourcin grapes.

Cassegrain Wines specialises in the production of méthode traditionelle sparkling, chardonnay, rosé, pinot noir, chambourcin, shiraz, Bordeaux blends, as well as some Italian and Spanish varietals. All of these can be enjoyed at the winery’s cellar door, or paired with food at its restaurant, just as they were intended to be. The winemaker and chef have worked together to create a menu that pairs each dish with two recommended wines to complement and highlight the depth of flavours in each.
