Founded in 1995 by Scotsman, Alasdair Sutherland, the winery began with a modern facility and cellar door built on a mature, twenty-year-old vineyard – ushering in a new era of wine experience in the region.
Over the last three decades since its establishment, Capercaillie has earned a loyal customer base across both domestic and international markets, gaining a strong reputation for quality and consistency. With thirteen acres under vine, the vineyard produces between 30,000 and 50,000 bottles annually, specialising in standout varietals such as chardonnay, shiraz and chambourcin.

Tasting Notes

⇐ 2023 The Ghillie Shiraz Hunter Valley
Medium- to full-bodied and handpicked from mature Hunter Valley vines. Matured in forty percent new, sixty percent seasoned French oak barrels for eighteen months. Dark berry and chocolate, toffee apple and black pepper on the nose. Long palate, tender acidity with enhanced tannins. Enjoy or cellar for the next decade.

⇐ 2024 Hunter Valley Chardonnay
A harmonious blend of vibrant crisp apple, pear and subtle hints of vanilla and oak. A well-balanced acidity and a smooth lingering finish. The 2024 vintage benefited from an ideal growing season, resulting in exceptional fruit character and depth.

⇐ 2024 Hunter Valley Gewurztraminer
Hues of light lemony gold and a beautiful bouquet of lychee, ginger, under ripe banana and rose petal on the nose. On the palate, it delivers a perfect balance of sweetness and acidity, leaving a refreshing and lingering finish. Enjoy young and fresh with exotic Indian curries and Thai foods.

⇐ Shimmering Chambourcin
Fruit for this wine was harvested from the Capercaillie vineyard and fermented in a stainless-steel fermenter in the winery. Intense colours of deep, vibrant purple and darker black fruits. This wine displays lovely, sweet maraschino cherries, chocolate and black forest cake flavours with an effervescent finish.
